What's the Scoop on Soy Protein?

Epidemiologists tell us that Asians, especially from China and Japan, have a lower incidence of breast cancer and prostate cancer than we do in the U.S.  Some studies credit the traditional diet, including soy.  However, Asians only eat small amounts of soy, about seven grams a day.  They eat mainly fermented soy, such as miso, tempeh and some types of tofu.  The fermented soy is easier to digest.

Unfortunately, most of the soy sold in the U.S. is not fermented and is processed.  So what do you do?
